PREPARATION GUIDE: FILIPINO PORK TOCINO
Tocino is a traditional Filipino marinated pork dish, known for its pinkish-red color and sweet-savory caramelized flavor.
OPTION 1: USING READY-MADE SEASONING MIX (LOBO)
Ideal for saving time while still achieving that glossy finish.
Preparation:
Use 1 packet of Roasted Red Pork Seasoning Mix – Lobo.
“Filipino-style” adjustment:
To get a more authentic taste, add to the marinade:
A generous amount of minced garlic
A splash of pineapple juice or vinegar (to tenderize the meat and add a slight tang)
Marinating:
Mix well with the pork and let it rest in the refrigerator (minimum 1 hour, ideally overnight).
OPTION 2: HOMEMADE MARINADE (100% AUTHENTIC)
Create your own sauce using ingredients from Asian stores.
Sweet base:
Palm sugar or white sugar (main ingredient)
Salty base:
Fish sauce (nước mắm) or soy sauce for umami
Natural color:
Annatto oil (achiote) for the signature bright red color
Aroma:
Garlic powder or fresh crushed garlic
COOKING TIPS (TRADITIONAL METHOD)
For tender meat with a caramelized surface without burning:
Water cooking method:
Place the marinated pork in a pan with a little water. Simmer over medium heat until the water fully evaporates.
Caramelization:
Once the water is gone, the pork will release its own fat. Let it fry gently in its fat until it becomes glossy and slightly crispy on the edges.
SERVING SUGGESTION
Serve hot with garlic fried rice (Sinangag) and a fried egg for a complete Filipino breakfast (Tocilog).
