COCK palm sugar is originally made from the sap of sugar palms, date palms or sugar palms. It is produced by harvesting the sap from the tree, then boiling it to create a syrup that crystallizes into different shapes and sizes. In Thai cuisine, palm sugar is mainly used in desserts and sweets, but also in curries and Thai sauces.
