Mix 1 sachet of Shan Butter Chicken Mix with 2 teaspoons of lemon juice, 3 tablespoons of yoghurt and 2 tablespoons of cooking oil. Coat 1 kg of boneless chicken cut into cubes with the mixture. Leave to marinate for 1 to 3 hours.
Boil 1 kg of finely chopped tomatoes with 1 to 2 cups of water for 10 minutes, until softened. Pass through a sieve to remove the skins and seeds. Set the tomato purée aside.
Heat a pan and add the marinated chicken. Cook for 2 to 3 minutes over medium-high heat, then remove the chicken from the pan.
Add the chicken to the tomato purée. Cover and cook over low heat for about 15 minutes. Add ¾ to 1 cup of unsalted butter and continue cooking for 5 minutes.
Add ½ cup of single cream, stir well and remove from the heat.
