Don Bocarte anchovies, of the Engraulis Encrasicolus species, are fished in the Bay of Biscay between March and June, when they have the most fat. Using an exclusive method, they are drained in a cloth that preserves their humidity better than conventional production, retaining all their softness and flavor. Added with top-quality Spanish olive oil, they are canned by hand in batches of 10 to 12 fillets for an exceptional presentation.
