Ingredients

  • Rice cakes: 100g
  • Fresh shrimp: 200g
  • Pork: 200g (pork belly or loin)
  • Vietnamese pork pâté (chả lụa): 100g
  • Eggs: 3
  • Fresh rice vermicelli: 200g
  • Fresh vegetables: (lettuce, aromatic herbs, basil, mint) 400g
  • Bean sprouts: 100g
  • Cucumber: 1-2
  • Carrot: 1 (optional)
  • Chives: 100g

Ingredients for the sauce

  • Nuoc mam: 3 tablespoons
  • Sugar: 2 tablespoons
  • Vinegar or lemon juice: 2 tablespoons
  • Water: 3 tablespoons
  • Garlic (3 cloves), chilli pepper (2) finely chopped

Preparation

Prepare the ingredients

Shrimp : Clean the shrimp, boil them with a little salt, then peel them and remove the black intestine.

Pork: Wash the pork, boil it with a little salt, then slice it thinly.

Eggs : Beat the eggs with a little salt, fry over low to medium heat until cooked through, let cool and then cut into thin strips.

Pork pâté : Cut into thin strips.

Fresh rice vermicelli : Rinse quickly with water to soften, then drain.

Fresh vegetables: Wash thoroughly, soak in salted water for about 10 minutes, then drain.

Bean sprouts: Rinse thoroughly.

Cucumber: Wash, cut in half, remove seeds, then cut into thin strips.

Carrot: Peel, wash and grate into thin strips (optional).

Chives: Wash and cut into 10-12 cm pieces.

Prepare the sauce

Mix well the fish sauce, sugar, vinegar (or lemon juice) and water. Stir until the sugar is dissolved.

Add the chopped garlic and chili pepper. You can also add roasted and crushed peanuts if you like.

Rolling the Spring Rolls (gỏi cuốn)

Place a rice paper on a flat surface (if it is dry and brittle, soak it in water to soften it).

Place a small amount of rice vermicelli, fresh vegetables, bean sprouts, cucumber, carrot, pork, fried eggs, pork pate and shrimp on the rice paper.

Place 1-2 sprigs of chives at one end of the rice paper so that when you roll it up, the sprigs will stick out nicely.

Roll tightly, folding the sides of the pancake inwards, then continue rolling to form a log.

The spring rolls are presented in an eye-catching manner.
