A simple, ultra-fragrant and comforting Thai dish, ready in just a few minutes.
The golden tofu perfectly absorbs the red curry and coconut milk sauce.
Ingredients (2 to 3 servings)
- 500 g firm tofu
- 25 g Thai red curry paste
- 400 ml thick coconut milk
- 50 ml water
- 1 onion
- 2 cloves garlic, minced
- Spring onions
- Fresh parsley
- Kaffir lime leaves (optional)
- Fresh chili (optional)
- 1 to 2 tablespoons fish sauce
- ½ teaspoon turmeric
- Salt
- Pepper
- Cooking oil
Preparation
1. Prepare the tofu
Cut the firm tofu into approximately 2 cm cubes.
Heat a little oil in a pan and fry the tofu until it's golden brown on all sides.
The tofu should be slightly crispy on the outside while remaining soft on the inside.
Set aside.

2. Prepare the curry base
In a saucepan, use a little of the oil that was used to cook the tofu.
Sauté:
- minced garlic
- sliced onions
Then add the red curry paste.
Sauté for a few moments to release all the aromas.
You can increase the amount of curry paste if you like spicier dishes 🌶️
3. Add the coconut milk
Pour in:
- 400 ml thick coconut milk
- 50 ml water
Mix then add the golden tofu and turmeric.
Season with:
- 1 to 2 tablespoons fish sauce
- salt
- pepper
Add kaffir lime leaves and chili if desired.
4. Simmer
Simmer over low heat until the sauce becomes creamy and slightly thick.
The curry is ready when the oil slightly separates from the coconut milk – this is what gives the dish its richness and depth ✨

Plating
Serve hot with jasmine rice.
Add:
- spring onions
- fresh parsley
to add freshness and color.
