Ingredients to prepare XXL stir-fried rice noodles with chicken

Large XXL rice noodles (banh pho lớn or pad see ew)
Ingredients for 2 people:

  • 300g of XXL banh pho noodles

  • 1 carrot

  • 1 pepper

  • 250g chicken thighs

  • 2 eggs

  • Tamari soy sauce: 3 tablespoons

  • Oyster sauce: 1 tablespoon

  • Rice vinegar: 1 tablespoon

  • Honey: 1 teaspoon

  • MSG (glutamate) optional: 1 teaspoon

  • Sriracha chili sauce (optional)

  • Chopped garlic

  • ½ teaspoon grated ginger

  • Spring onions

  • Coriander: 30 g

  • Roasted peanuts

  • Fried onions

  • Salt, pepper


1. Prepare the chicken

Bone the chicken then cut into small pieces of about 1 cm.
Marinate with: 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, grated ginger, pepper. Let stand for at least 15 minutes.

2. Prepare the other ingredients

Noodles:
Cook the noodles in hot water for 6 to 8 minutes (to check: pinch a noodle between two fingers; if it separates, it's ready). Drain and then run directly under cold water to stop the cooking. Set aside.

Vegetables :
Cut the carrot and bell pepper to your liking (recommended: the same size as the chicken). Blanch the vegetables for 1 to 2 minutes, depending on the desired crispness. Set aside.
Wash the coriander and spring onions, then cut into 3cm pieces.

Sauce:
Combine 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1/2 teaspoon of MSG (optional), 1 tablespoon of honey, pepper, and 3 tablespoons of water. Mix well.


3. Cooking

In a wok, sauté the garlic over high heat until golden. Add the marinated chicken and stir well for 2 minutes. Add the carrot and bell pepper and stir for another 2 to 3 minutes. When the chicken is cooked, set aside.

In the same wok or skillet, add a little cooking oil and then the noodles. Stir and turn for 2 minutes, then add the chicken and vegetables. Mix well.

Gradually pour in the prepared sauce. Adjust with a little soy sauce, honey, or vinegar to taste. Add the spring onions and stir for another 2 to 3 minutes.
