Preparing sweet-and-sour chicken phở trộn

1. Cook the chicken

  • Bring water to a boil with a few star anise and 1 teaspoon soy sauce to create a subtle aroma.
  • Add the chicken and cook for 15 to 18 minutes depending on its thickness.
  • Remove, leave to cool, then shred into medium-sized pieces.
  • Reserve about 100 ml of the broth for preparing the sauce.

2. Cook the rice noodles

  • Soak the dry FARMER 5 mm noodles for about 30 minutes to soften them.
  • Cook in boiling water for 6 to 8 minutes until soft and springy without breaking.
  • Drain, quickly rinse under cold water, then set aside.

3. Prepare the sweet-and-sour tamarind sauce

  • Sauté the garlic with a little cooking oil to release its aroma.
  • Dilute the tamarind paste in 5 tablespoons of the reserved broth.
  • Add the SQUID fish sauce, SEMPIO soy sauce, sugar, lime juice, sautéed garlic, diluted tamarind paste, and a little fresh chili if desired.
  • Mix and taste until you achieve the perfect balance of tangy, sweet, and salty flavors.

4. Mix the phở

  • Place the noodles, chicken, and herbs in a large bowl.
  • Add the roasted peanuts, fried onions, Thai basil, coriander, grated carrot, cucumber, and bean sprouts.
  • Pour over the tamarind sauce and gently toss until everything is evenly coated.

5. Plate and serve

  • Arrange the phở trộn in a deep plate and sprinkle with fried onions.
  • Garnish with a few Thai basil and coriander leaves.
  • Serve immediately with lime wedges and slices of fresh chili.

Hello Asia tips

 Use FARMER 5 mm noodles to keep a firm texture after mixing.
 Hello Asia tamarind paste brings a gentle, natural tang that is different from lemon or vinegar.
 For a stronger flavor, slightly increase the amount of SQUID fish sauce and SEMPIO soy sauce.
